Why didn't you tell us about Good Eats?!?

We caught an episode of this on a friend's TiVo this weekend - we call it poor-man's HMO when we visit - and are hooked. The guy is wonderfully insane, and has a kitchen that reminds my wife to her delight of a science lab.

Is there a can't-miss episode of this, not that we would with our high-up SP?

A major Good Eats fan here! I first heard of it on this forum. I saw a number of oblique references here and there and thought "gee, I should check this out." What a revelation! My wife hates to cook, but she loves watching the show with me, it's so good.

OMG, his pancake recipe is absolute perfection. Well, after I modified it (half buttermilk, half regular milk--the all buttermilk recipe was too tangy for me).

BTW, I learned last week that the recipe also makes a kick butt waffle. I cut the dry mix by about 1/8 of a cup (basically I just didn't fill the 1 cup measuring cup to the top each time), and added a tablespoon of vegetable oil.

So, yeah, Good Eats rocks.

I've got a salt cellar, the plunger measuring cups, AND the digital thermometer. Ha Ha!

I also have 79 of the episodes on my primary TiVo and another 11 on VCD. Almost have the full set, and actively ripping them via my computer's capture board. I wish they'd just release all the episodes as seasons.

AB is the Man. I first caught his show before I had TiVO and let me tell ya, it is much easier to watch as I was never quite smart enough to figure out when it was on - now I don't have to.

This Christmas I got the salt celler and the measuring cups, plus 2 books and a cool t shirt. :) I doubt that a week goes by without either using his recipes directly or cooking something inspired by his show.

Pass on the Good Eats tip to your friends and family, they will really love you for it.

PS - His coffee brew is pretty intense. :)

I've been preaching Good Eats to my friends for some time now. Managed to hook a good chunk of them.

It's hard to point out an episode or two that are just above all others. All of them are incredibly good. But I have to admit, I drool more over the Art of Darkness ones :) (mmm.. chocolate)

I can attest to that, I made two fruitcakes under his recipe this holiday season. At our family gatehring I had several sworn fruitcake haters sample it, loved it and are now eying the one I have in reserve in my curing experiment.

AB is great... and is definitely the same in person as he is on TV (saw him during his first book tour).

I would say that almost all of the episodes are good; though some people didn't like the Beer episode that much.

My favorite one is A Good Eats Thanksgiving = everyone repeat "Stuffing Is Evil"

I've got his first book, the plunger set...and a bunch of episodes on TiVo. I thought about moving them to Tape - but why?

Heh, my girlfriend made me take her to the local restaurant supply store to buy her a set of the Cambro Camsquare containers. She insisted that she wouldn't use his recipe until she had the same containers he uses. :) Glad I did, those buttermilk pancakes are awesome.

I've been watching him since the begining. I'm surprise at how many new shows there have been showing up. Luckily for me my tivo catches every one of them =) If you watch the old episode, you'll notice that the first couple episodes were not as funny. More of a serious type atmostphere. Also he had more hair =) I especially like the thanksgiving episode where we find out "W" is actually a robot... =)

That's hard core.. I have several Camsquare containers myself, but I'm not acutally usign one to store the pancake mix.

I love the fact that he talks about why you cook the way you do instead of just making the food. That education has given me the ability to experiment in the kitchen and make some decent meals.

I'm going to try the clay pot standing rib roast in a couple of weeks.

I had the sirloin his way last month (from the later steak episode, not the very first steak episode where he did the iron skillet steak) and it turned out perfectly done -- I usually overcook them by my fiancee likes them rare, and these were perfect for her.

My favorite Good Eats scenes were in the episode on ham and the more recent one on oats, where he uses Ken and Barbie dolls to simulate what's going on inside the food. "Let's say this little pink house is an oat and inside lives a shy, naturally occurring gum called pentosans..."

My favorite recipes:
- Buttermilk pancakes - my kids won't eat any other type of pancakes (I also shape them as Mickey Mouse)
- iron skillet steak (nothing to it really)
- Bar-B-Cue (less) ribs (Baby back ribs) - good eats

I still don't have the salt cellar, last time I tried ordering them they were sold out. I'll have to try again.

Another long-time GE fan here! I managed to catch the premiere episode back in 1999. My initial reaction was "Who the &$#@ is THIS kook?!"... by the end of the episode, I was hooked.

I have all (approaching 100) episodes on tape, but thanks to TiVo, I'm re-capturing all episodes to burn to DVD.

Made by Polder, there are several different models. The one Alton uses and the best I've tried is the Cooking Thermo Timer. You can find them at places like Linens n Things. On warning. Don't expect the probe wire to last long when used in the grill. Ours became hard and brittle after a few BBQ'd turkeys and no longer functions dependably. We bought another Polder model, don't have the name handy, but it doesn't hinge. The probe is vinyl coated, it doesn't work with the Thermo Timer nor are the timer/temp controls as intuitive to use.

I pray to the god that is Alton Brown all the time! Every one of his recipes that I've tried is really Good Eats! As for thermometers, I ran right out and bought one of those digitals the first time I saw him use them. I've just found, in the new Grill Lover's catalogue, two new thermometers that I must have. One is an infra-red, the other is wireless! Both would be great for grilling!

In one of AB's books he mentions Jeff Smith, from "The Frugal Gourmet" as the first cookbook he ever bought. TFG was another show I enjoyed watching pre-GE, don't quite remember the hoopla that knocked him off the air, but sure did like his style.

Try the "in foil" Pot Roast (Chuck for Chuck, episode, I think). YUM!

The hardest part was finding the right piece of meat. :)

Definitely, my local megamart is still trying to unload their fruitcake junk - those freaky colored bits of flavorless "fruit". I really do think that if people would just use normal dried fruits instead of that junk there would be a lot more fruitcake lovers.

I did have one person actually complain that I did not use the colored stuff, they like the way it looked with the dayglo bits in there.

I first discovered this show a few months ago when an auto-record Title Wishlist I had set up for DEEP SPACE (trying to find Star Trek DS9) turned up a Halloween episode of his ("Deep Space Slime"). We've been hooked ever since, even my kids like watching it.

Alton Brown is the Norm Abram of food. I usually hate cooking shows, but this one is fantastic - he's energetic and funny, and I never feel like I'm being talked down to. I also like the fact that he explains the science and the WHY behind the cooking, it's helped me out with a number of my own failed attempts ("ah! so THAT'S why mine never turns out like my grandma's!")

I haven't bought anything yet, but I'm thinking the push-measuring-canister things, the temperature probe, and the tapered Pyrex measuring whatsis (narrow at the bottom, wide at the top - perfect for melting chocolate chips in and dipping frozen bananas).

You're looking for the "Instant" Pancake Mix recipe from the show Flap Jack do it Again

I recommend watching the episode if you can, although it isn't currently on their schedule. The recipe instructions are good, but watching them are even better. Pay special attention to:

Good Eats is the only cooking sho I can stand to watch. Mainly due to the fact that he is just so funny. Very quirky. :) Been watching the show for a couple years now. Whats really funny? I don't even cook, at all. However I love watching the stories he tells and the fact he has such a passion for cooking.

My girlfriend adores the "Lab-Type" Kitchenware he uses. I've checked all his fan sites but came up empty. We currently have the V shaped Measuring Cup, the Expandable Measuring Cups,Salt Cellar and the Storage Containers.

She's currently looking for the Beakers that he uses for storing liquids.

Would it really be appropriate bringing W into a Man only episode?

The Man Food Show was excellent. I love how Alton never gets into the usual froo-froo stuff that most cooking shows do. He doesn't hesitate to explore something fancy, but he's not afraid to do a show about making corndogs, either.

Anybody know how much that deep fryer he used is?

I picked up this Taylor Digital Oven Thermometer/Timer at Amazon (for more than their current sale price of $13, too). It's worked well on turkey, meats, liquids, and bread so far. I probably use it 5 nights a week as a timer, too. The magnet on the back is handy and the readout portion is on a swivel. All in all, great little unit.

I recently cooked a whole fish using the "salt dome" with fresh rosemary. Who knew fish could <be> this good - wow!

IIRC, the puppet was in one of the earlier episodes. Maybe Three Chips for Sister Marsha. The chicken was the star of Fry Hard 2. I haven't finished watching it yet, but there were other items from earlier shows.

I could have sworn he did another "kidnapping" episode a la Misery with the same woman (that's why she said "Don't you remember me, I'm your biggest fan" at the beginning) but I can't remember which one it was. Anybody know?
