I'd say you missed the most important factors:
Longevity
Price
Performance of the HD is not a limiting factor - original units were 4500 rpm drives. Any 5400 rpm drive should be fine it is "current" technology (within the last 2 years).
ALL drives have their proponents and critics, so just be sure you thoroughly test the drive you get to insure it is not DOA, and you should be fine.

Size, and temperature.
You want the largest drive you can get. But also, the drive must run cool -- if it runs too hot, you run the risk of overheating the drive, and get lots of soft errors and stuttering.
Also, disable items such as write verification -- they impede the ability for the TiVo to get real-time performance. It's not the raw performance in bits/sec that's important, it's the upper bound of disk access times -- if the disk takes too long to fulfill one request, the TiVo might not be able to make other requests in time.
